What better definition of a spy is there than knowledge thief?
From not caring where or how Charlie got a loaf of bread to stealing fizzy lifting drinks to wanting to know the exact limits of what he can tell, Grandpa Joe displays a certain moral ambiguity about other people's property, both physical and intellectual.
If you factor in his more exotic thefts like sponging off his daughter-in-law for twenty years, robbing Charlie of his innocence, and his steadfast insistence that only he can accompany Charlie, it becomes clear that Grandpa Joe is a world-class thief and con-man. He knows how to work the system and the people around him to get exactly what he wants, regardless of the cost to others.
